my wish has come true. its finally summer here in nyc! i hope everyone had an amazing weekend of celebrating trees and the earth.
as some of you may know, i love love love to cook. however, using the oven or even the stove once the heat sets in can usually heat an apartment to unbearable temperatures. thus, as of yesterday, i converted to using the blender as my primary cooking tool. i made a delicious fresh salad dressing, a chilled cucumber-yogurt soup, and a divine avocado mousse.
if you are interested in "cooking" with the blender, try the mousse and i think you'll be converted. avocados are normally used in savory dishes, but they work amazingly well in this sweet dessert.
3 ripe avocados
1/4 -1/2 cup sugar
l fresh lemon, juiced
scoop out the avocados and combine all ingredients (only 1/4 cup of the sugar) in blender. blend on "whip" until everything seems smooth and combined. taste. add more sugar if you'd like. eat immediately. can be stored in frig for 2-3 days. enjoy!
